Now days you got to do credit cards. I'd require a deposit. That way you have the card number before you even travel to the site. Require 24 hours, or 48 hours cancelation - or they loss the deposit. Have an agreement form you fax or email to them that they sign and send back. If not, they can dispute the credit card charge.
